『ジャック・セロス』のシャンパーニュの醸造法を箇条書きですが、 詳しく説明いたします。
1)現在ジャック・セロスはアヴィズ、オジェ、クラマン、アイに畑を所有（アイに
ある畑の隣りは何とボランジェ！！）。またこれらの畑で収穫されたぶどうは
畑ごとにドメーヌ・ルフレーブから購入した小さな樽で醸造される。
2)平均樹齢38年という古い樹は、収穫時の作業を軽減させるためできるだけ剪定。
収穫はできるだけ遅く、手摘みでひとつずつ行う。圧搾後、225Lの樽に移され、
1年近くそのまま寝かせる。週に一度スチールの竿でバトナージュ。
3)手摘みで収穫後、自然酵母によって新樽（オーク樽）の中で発酵。
その後リーで半年寝かせられるが、その間週に一度バトナージュが行われる。
4)セロスのシャンパンは澱抜きされるまでイースト菌とともに8年間寝かされる。
これはワイン特有のスタイルで、特にブルゴーニュの白ワイン(発泡タイプ)に
類似。
5)セロスはM.L.F.（マロラクティック発酵）はワインの品質を壊すと考え一切
行っていない。そして8年間ボトルの状態で寝かせ、澱引きをする。
クリュグのようにすべてのセロス商品は澱引き後最低6ヶ月熟成される。
6)補糖はとても少なく、ワインの自然のバランスを崩さないよう果実糖のみが
使われる。 |

ジャック・セロスの人気キュヴェ「エクスキューズ」はやや甘口タイプです。個人的に大好きなアイテムです。
基本非常に酸っぱいタイプですから、私にはセックがちょうどよい感じです。
レコルタン・マニュピランのセロスに対し、安定感抜群のドラモット、ボランジェをセットにしました。

Since awarding the July 2019 disgorgement of Selosse's emblematic NV
Grand Cru Blanc de Blancs Substance a three-digit score, readers won't
be surprised to learn that I've drunk a dozen bottles?all in the
interest of due diligence, of course. Happily, the wine continues to
show extraordinarily well, bursting from the glass with aromas of
honeyed pears, buttered toast, candied peel, fenugreek and almond paste.
Full-bodied, textural and enveloping, it's vinous, concentrated and
sapid, marrying to remarkable effect the unique patina imparted by
Selosse's distinctive winemaking practices with the powerful yet
incisive profile that defines Avize. This is a brilliant Champagne, and
my only regret is that I doubt I'll have any bottles left five years
from now. |

Disgorged in February 2020, the latest rendition of Selosse's NV
Extra-Brut Grand Cru Les Carelles is already showing brilliantly,
unwinding in the glass with aromas of honeyed citrus fruit, dried
apricot, fresh peach, orange oil, beeswax and toasted nuts. Full-bodied,
broad and incisive, it is elegantly muscular and youthfully tightly
wound, with a racy spine of acidity, chalky structuring extract and a
long, mineral finish. |

Disgorged in February 2020, the latest release of Selosse's NV Extra
Brut Grand Cru Le Bout du Clos offers up complex aromas of golden
orchard fruit, almond paste, yellow plums, beeswax and spices.
Full-bodied, deep and concentrated, it's tightly wound after its recent
disgorgment, with racy acids, elegantly muscular structuring extract and
a youthfully frothy mousse. Long and penetrating, I can't wait to
encounter it again with a little bottle age. |

I drank a bottle of the January 2018 disgorgement of Selosse's NV
Extra-Brut Grand Cru La Cote Faron from my cellar, and it showed
superbly?especially several hours after opening. Wafting from the glass
with aromas of buttered toast, ripe pears, quince, mirabelle, honeycomb
and white flowers, it's full-bodied, rich and fleshy, with an enveloping
core of ripe, textural and generously patinated fruit, succulent acids
and a broad, saline finish. Formerly the cuvee Contraste, this bottling
is drawn from a perpetual reserve established in 1994. |

Based on the 2011 vintage and disgorged in March 2018, the latest
release of Selosse's NV Extra Brut Grand Cru Sous le Mont?derived from a
east-facing site in Mareuil-sur-Ay not far from the Clos des Goisses.
The wine unfurls in the glass with an inviting bouquet of waxy orchard
fruit, honeycomb, dried white flowers, smoke and peat. On the palate,
it's full-bodied, satiny and enveloping, with a charming, gourmand
profile that's simultaneously satiny and saline. |

A total turn on, the 2002 Extra-Brut Grand Cru Millesime is one of the
great wines of this vintage. Exotic, ripe and totally flashy, the 2002
bursts from the glass with massive layers of fruit. Honey, spices, tangerine,
nectarine, flowers and mint all come to life in this huge, vivid Champagne.
Waves of rich, tropical infused fruit supported by veins of saline minerality
flow through to the voluptuous, huge finish. This is a stunning wine from
Anselme Selosse. Ideally, the 2002 needs a few years for some of the baby
fat to drop off, but it is pretty fabulous today. The overt richness bears
more than a passing resemblance to Montrachet, from the Chassagne side.
Disgorgement date: February 23, 2012. Anticipated maturity: 2012-2027.
